Black cardamom has a strong, smokey taste that is quite different from traditional green cardamom. Cardamom is great in a variety of baked goods. The most popular and most traditional use for cardamom, however, is in curry and tandoori dishes. Use with cumin and other spices to add different layers of flavour.
